Tomato and Basil Soup

Tomato and Basil Soup

Ingredients

  • 1 tin of peeled plum tomatoes
  • 2 pints of water
  • 2 tbsp tomato puree
  • 1 onion
  • 1 large potato
  • 3-4 cloves garlic
  • 2 tbsp olive oil
  • 2 tbsp of basil
  • Salt and pepper
  • 1/2 teaspoon red chilli flakes (optional)

Method

  1. Peel and chop onion and garlic, and fry until onion is soft
  2. Peel and chop the potato
  3. Add the water, add the potato and bring to the boil
  4. Once boiling, add tinned tomato and puree, stir and simmer until potato is cooked
  5. Add the basil
  6. Blend the mixture and season
  7. Serve with fresh bread and enjoy!
